Energy Levels Empty Energy Levels

I'm trying to get my 2 trainees as much game time as possible to get their CSR/stats up but am finding they are fatiging a lot quicker than my older players playing the same amount of games. I've got them training 9/10 spots per week so am expecting this.

Do people recommend resting them for the harder matches or the easier ones so they benefit as much as possible from the games they are playing?

If the games don't matter to your, run your trainees into the ground. The worst that can happen is they end up getting injured but even injured players still get 100% training.

However if there are games that you need to win then don't damage your club's long term success over it, just give them games when you can afford to.
